I had a tasting of a similar salad at a local grocery store a week ago. The tasting was to sell their prepackaged feta with olive oil and herbs. It was good, but didn't have the flavor I thought it could, so I decided to make come up with my own version at home. This is a perfect summer salad.
This 'recipe' is more of a process of putting ingredients together. You can use as much or as little as you want. For two people I used roughly;
2 medium sized tomatoes, cut into chunks
1/4 cup Greek or regular black olives, sliced
1/4 cup feta cheese, crumbled
1-2 Tbs. of good quality olive oil
1/8 tsp. each of dried basil and oregano, crushed (fresh may also be used but add a bit more)
freshly ground black pepper
Mix everything together in a bowl, and serve. This is a great appetizer salad, or even a good light salad to finish a meal with.
